I’m with you… If you had told me years ago that eating a salad could leave you full, completely satisfied, and energized, I wouldn't have believed you. I used to be the ultimate skeptic that a salad could be anything more than a starter to the rest of a meal. As a collegiate athlete, I recall watching my distance running teammates fool themselves into thinking that ordering the wilted green salad with unripe tomatoes and a couple of olives, topped with a bottled dressing (which often contains a lot of sodium), was the healthiest option on most menus. Instead, they taught themselves how to achieve their best performances by consuming a marginal amount of nutrients. I wasn't able to appreciate a salad as a true meal until my nutritionist introduced me to what he called a “5-Point Salad”. Not only was he a well-respected nutritionist, he was also a biochemist who studied the impact proper nutrition had on peak performance. My first 5-Point salad was my own creation- a bed of lettuce, 5 different fresh vegetables, along with some lean protein. I admitted to him later that although it was the best salad I had ever eaten, I had still been a bit hungry. He looked at me, perplexed, and said something that I had not thought of on my own, nor have I ever forgotten. He simply said, “Next time, eat more.” While it would have been a no-brainer for me to eat another slice of pizza or another piece of chicken, if I had still been hungry, most of us never think— I’m still hungry, let me have more broccoli, carrots, or kale. Even well-intentioned restaurants and health-minded individuals can alter the healthy intention of a salad by adding more cheese or dressing, or empty carbs, in an attempt to make it more filling.

About the Founder
The delight and sense of accomplishment from becoming an Olympic track and field athlete have never left me. Being a world-ranked athlete carries tremendous personal responsibility. In the early part of my athletic career, although I ate a bit healthier, the meals I cooked for myself bordered on uninspired—usually just a simply-prepared protein, a starch, and a vegetable (and frequently, dessert).
Nearing the end of my career, I joyfully became a mom to twins, and my approach to food was transformed. Suddenly responsible for two little humans, I became hyper-aware of what I was putting in their tummies. I was fortunate enough to be able to go to the market nearly every day—occasionally twice if the mood struck—selecting the freshest ingredients to make meals from scratch. While we dined out like our friends, I loved that the meals I made at home had considerably more nutritional value and tasted just as good.
I also discovered that almost everyone, even young children, enjoys a beautifully plated presentation. My desire to feed people well soon extended to school events and parties my family hosted. In the final year or two of my athletic career, I was introduced to a brilliant nutritionist and biochemist who studied how healthy eating directly affects performance and recovery. While you could argue that this is not a new concept, he perfected it in such a way that our partnership took my cooking to another level. I immediately incorporated what I learned into my family’s dinner table, and I look forward to sharing the benefits of what I’ve been practicing for years— with you!
